You can also use some of the fresh produce of Mexico, such as avocados and peppers, to create vibrant centerpieces or decorations. Ingredients

  • 1 pound Mexican Chorizo
  • 1 bottle Corona Extra or Modelo Especial beer

Preparation

  1. Start by pricking the chorizo with a fork. Place the chorizo in a non-reactive bowl (glass or plastic) and pour a bottle of Corona Extra or Modelo Espeical over the chorizo. Allow the meat to marinate in a refrigerator for about 24 hours. Drain and discard the beer.
  2. Grill the chorizo over moderately high heat, turning until browned all over and cooked through, about 15 minutes.
