Chilled corned beef is easier to slice; hold brisket firmly in place with a fork and thinly slice meat against the grain.

We use rustic whole grain mustard for this sandwich; it would also taste great prepared with Dijon mustard, Deli style brown mustard or zesty horseradish mustard.
Ingredients
- 8 slices rye bread
- 4 tablespoons dark whole grain country mustard
- 1 pound corned beef, thinly sliced
- 8 slices Tillamook white Cheddar cheese
- 4 tablespoons butter, softened
Preparation

Spread mustard on 4 slices of bread; top each slice evenly with corned beef and sliced cheese.
- Close sandwiches with top slices of bread.

Spread butter evenly over outsides of sandwiches; grill over medium-low heat on both sides until bread is toasted and cheese is melted.
